PEA SOUP 
1 lb. split peas, rinsed and sorted
Ham bone or leftover ham pieces
2 qts. water
1/2 c. chopped onion
1/2 c. chopped celery
1/2 c. diced potato
1/4 c. chopped carrots

Cook peas and ham bone in water for 1 1/2 hours. Add vegetables and simmer 45 minutes or until vegetables are tender.
