BANANA BREAD 
1 1/2 c. melted butter
4 eggs, room temp.
1/2 tsp. almond extract
1 3/4 c. brown sugar or 1 1/2 c. honey
2 1/2 tsp. vanilla extract
1 orange rind, grated

Beat in large bowl, beginning with sugar or honey and butter, add eggs one at a time. Add remaining ingredients, and beat until light in color. Sift the following together: 1 tsp. salt 3 tsp. baking powder 2 tsp. cinnamon 2 c. well mashed banana soaked in 1 c. strong coffee 2 c. white flour 1/2 tsp. baking soda 1/2 tsp. nutmeg

Add flour mixture and banana alternately to batter mixture, beginning and ending with flour. Add nuts and raisins if desired.

Generously butter 2 loaf pans and sprinkle with sesame seeds (they'll stick to the batter). Divide batter and bake at 350 degrees for 40-50 minutes. Makes two loaves. Cool 10 minutes in the pan before removing. Makes the moist and delicious banana bread I've ever had.
