BANANA - ORANGE BREAD | |
2 c. sifted flour 1 1/2 tsp. pumpkin pie spice 1 tsp. baking soda 1 tsp. baking powder 1 c. mashed, ripe bananas (2 lg.) 1 (6 oz.) ca frozen unsweetened orange juice concentrate, thawed 2 eggs, beaten 1 c. raisins 1 c. chopped walnuts On sheet of waxed paper, sift together flour, pumpkin pie spice, baking soda, and baking powder; set aside. In large bowl, mix bananas, orange juice concentrate, and beaten eggs until well blended. Stir in raisins and chopped walnuts. Add dry ingredients; stir until just moistened. Pour into greased 9 x 5 x 3 inch loaf pan. Bake in 350 degree oven 40 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes. Remove from pan; cool on rack. Slice thinly. Per serving: 112 calories, 3 grams protein, 18 grams carbohydrates, 4 grams fat, 23 milligrams cholesterol, and 60 milligrams sodium. |
