1/2 c. oil
3/4 c. granulated brown sugar
1 c. applesauce
1 1/2 c. flour
1 tsp. baking soda
1 tsp. cinnamon

Preheat oven to 375 degrees. Oil and flour an 8 inch cake pan or muffin tins. Cream the oil and sugar together and mix in the applesauce and baking soda. Add flour and cinnamon, blending thoroughly. Pour the batter into pan or tins. Bake 30 minutes for an 8 inch cake or about 20 minutes for cupcakes. Yield: 12 cupcakes or 1 (8 inch) cake (9 servings).
