DIABETIC APPLESAUCE CUPCAKES | |
1/2 cup butter 1/4 cup sugar 1 tbsp. baking soda 1/4 tsp. salt 1 1/2 tsp. nutmeg 1 tsp. vanilla 1 egg 1 1/2 cup flour 1/4 cup chopped walnuts 1 tsp. cinnamon 1 cup unsweetened applesauce Cream butter, egg, vanilla, and sugar until fluffy. Sift dry ingredients and add alternately with applesauce. Stir in walnuts. Spoon into cupcake tins and bake at 375°F for 15 to 20 minutes. Yields 12 cupcakes. |
