DATE DROP COOKIES 
1 1/2 c. cut date
1/2 c. water (or more)

Cook to soften, mash and cool. 1/2 tsp. salt 2 tsp. vanilla 2 c. brown sugar 2 unbeaten eggs, 1 at a time and beat after each 3 c. flour 1 tsp. baking soda

Fold in the cooled date mixture, add nuts if you wish. Drop by teaspoonfuls on greased cookie sheet. Bake 10 minutes at 350 degrees. Makes about 40 cookies.
