TACO CASSEROLE 
1 1/2 lb. ground beef
1 env. taco seasoning mix
1 (1 lb.) can pinto or kidney beans
1 (8 oz.) can tomato sauce
1 c. coarsely crumbled tortilla chips (any flavor)
1/2 c. (or more) shredded cheddar cheese

Cook ground beef over moderately high heat until lightly browned, stirring occasionally. Add seasoning mix, undrained beans and tomato sauce; stir to combine. Leave over heat until mixture comes to a boil, stirring frequently.

Pour meat mixture into a deep 2 quart casserole dish. Sprinkle crumbled tortilla chips around the top edge of meat mixture; sprinkle cheese over chips. Bake in a 375 degree oven for 20 minutes or until cheese is melted. Serves 4-6. Note: This is an easy, tasty recipe for your junior cooks to make!
