TERRI'S BREAKFAST SURPRISE 
1/4 c. oil
1 pkg. frozen hash browns
5 or 6 eggs
1 c. shredded cheese
6 to 8 strips cooked bacon

In large skillet, heat oil and then add the frozen (or thawed) hash browns. Cook until tender. With a spoon, make 5 or 6 wells. Lightly spray wells with a cooking oil. Add 1 egg to each well (may scramble or leave whole). Cover and let poach. When eggs are nearly done, add crumbled bacon (or crumbled ham or sausage) and shredded cheese until melted.

Serves 4 to 6.
