GREEK SALAD 
1 cucumber, peeled & cut in 1/2 inch dice
1 red bell pepper, cut in 1/2 inch squares
2 tomatoes, seeded & cut in 1/2 inch dice
Handful of parsley
Handful of mint leaves
2 green onions, roots & upper stalk removed
4 oz. Feta cheese
Olive oil
White wine vinegar

Mix cucumber, bell pepper and tomatoes in a medium sized bowl. Chop parsley, mint leaves and green onions together until finely minced (I use a food processor). Stir into vegetables. Crumble in the Feta cheese. Add olive oil and vinegar to taste, then toss lightly. Serve.
