PINEAPPLE UPSIDE DOWN CAKE 
1 can (20 oz.) sliced pineapple
1/2 c. butter
1 c. firmly packed brown sugar
1/3 c. coconut
5 maraschino cherries, halved
1 pkg. (18 1/2 oz.) yellow cake mix

Melt butter in 13 x 9 inch pan. Add sugar. Arrange fruit, coconut and cherries in sugar. Prepare cake mix as package directs. Spread over fruit. Bake at 350 degrees for 45 to 50 minutes until tests done. Cool 5 minutes. Invert onto large serving dish. Serve warm or cold. Serves 12 or more.
