ZESTY MEATBALLS 
1 1/2 lbs. ground beef
1/4 cup onion, chopped
1/2 tsp. salt
1/2 cup fine cracker crumbs
1/4 cup milk
1/4 cup parsley, chopped
2 tbsp. butter
1 clove garlic, minced
1/4 tsp. freshly ground pepper
1 egg
1 c. sour cream

Break ground beef up and place into mixing bowl. In frying pan, heat butter and add onion and garlic. Sauté 2 minutes or until onions are limp. Add to the ground beef. Mix in the salt, pepper, cracker crumbs, egg and milk. Shape into walnut sized balls.

In a frying pan, brown meatballs on all sides in oil, shaking pan to keep them turning. Meatballs will be cooked in about 5 minutes over medium high heat. Remove meatballs; keep warm.

Drain any excess fat from pan. Add a small amount of water to pan. Bring to a boil; scrape up brownings from the pan. Add sour cream. Stir, add meatballs and heat to serving temperature. Sprinkle with chopped parsley.

Serves 4.
