COUNTRY CLUB CASSEROLE 
2 1/2 c. cooked chicken, in lg. pieces
2 c. hot cooked rice
1 c. finely chopped onions
1 c. finely chopped green peppers
1/3 c. sliced pimentos
1 tsp. garlic salt
1/4 tsp. pepper
1 can cream of mushroom soup
1/2 c. mayonnaise
1 tbsp. chopped parsley
1 c. grated Cheddar cheese
Pitted ripe olives

Combine all ingredients except cheese and olives. Toss lightly. Turn into a greased shallow 2-quart casserole. Sprinkle with cheese and garnish with pitted ripe olives. Bake at 350 degrees for 25 minutes or until thoroughly heated.
