FRIED ZUCCHINI CAKES 
3 c. shredded unpeeled zucchini
1/2 c. shredded cheddar cheese
3 tbsp. snipped parsley (or dry)
1 lg. clove of garlic, finely chopped (or dry powder to taste)
1 egg
1 tsp. salt
Dash of pepper
1 c. Bisquick mix

Stir and drop by spoonful in lightly oiled skillet. Brown on one side, turn and brown on other side. Delicious, everyone loves them.
