STRAWBERRY-FIG PRESERVES | |
3 c. mashed figs (about 20 med.) 2 (3 oz.) or 1 (6 oz.) strawberry gelatin (or any fruit flavor) 3 c. sugar 2 tbsp. fresh lemon juice Thoroughly mix figs, gelatin, sugar and lemon juice in a large heavy saucepan. Bring to boil over medium heat and continue boiling for 3 minutes stirring occasionally. Quickly pour into sterilized glasses. Wipe tops with a clean cloth and carefully run a knife blade around edge to release air bubbles. Seal at once with a tight lid. For immediate use, refrigerate preserves. For extended storage, process in boiling water bath, about 5 minutes for half pints. Start timing when water returns to a full boil after hot jars are lowered into boiling water. Remove jars from water and set on counter to cool. Makes about 6 (6 oz.) glasses. |
