BANANA BREAD | |
3/4 c. whole wheat flour 3/4 c. all-purpose flour 1/3 c. sugar 2 1/4 tsp. baking powder 1/2 c. non-fat dry milk 1/4 tsp. salt (if desired) 3/4 c. Grape-Nuts cereal 1/2 c. raisins 2 eggs 1 c. mashed bananas (2 to 3 med. bananas) 1/4 c. butter, melted 1/4 c. water In large bowl combine whole-wheat and all-purpose flour, sugar, dry milk, baking powder and salt. Stir in cereal and raisins. In another bowl beat eggs; combine with bananas, butter and water. Add to flour mixture, stirring until dry ingredients are just moistened. Grease and flour a 9 x 5 x 3 inch loaf pan. Pour in batter. Bake bread in preheated 350 degree oven 50 to 55 minutes or until tester inserted in the center of bread comes out clean. Let bread cool in pan about 15 minutes, then turn out on rack to finish cooling. Wrap tightly in plastic wrap or foil and, if possible, let it stand at least 8 hours before slicing. Makes 1 loaf. |
