CANDIED SWEET POTATOES 
6 med. size sweet potatoes
1 stick butter
1 1/2 tsp. vanilla
1 1/2 c. sugar

Parboil quartered sweet potatoes (about half done) in small amount of water. Melt sugar, butter and 1/2 cup of water potatoes were cooked in; add vanilla. Place potatoes in glass baking dish. Pour over all other ingredients. Bake at 425 degrees until candied.
