PUMPKIN NUT COOKIES 
1/2 c. shortening
1 c. sugar
2 eggs, beaten
1 c. Libby's solid pack pumpkin
2 c. all-purpose flour, sifted
4 tsp. baking powder
1 tsp. salt
2 1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. ginger
1 c. raisins
1 c. nuts, chopped

Cream shortening; add sugar gradually. Cream until light and fluffy. Add eggs and pumpkin, mixing well. Sift flour, baking powder, salt and spices together. Stir in dry ingredients and mix until blended. Add raisins and nuts. Drop by teaspoonfuls on greased cookie sheets. Bake at 350 degrees for approximately 15 minutes. Makes 4 dozen cookies. May be frozen if desired.
