BAKED MEATBALLS 
1 lb hamburger
2 medium carrots, shredded
1 large or 2 small potatoes, shredded
1/2 medium onion, shredded
1 egg
1/8 cup milk
salt and pepper, to taste
1 tbsp. parsley flakes
flour*
oil for browning*
1 can cream style soup+1 can water

Mix hamburger, carrots, potatoes, onion, egg, milk, salt & pepper, and parsley flakes together. Form into meatballs, about 1 1/2 inches. Roll in flour and brown in oil.*

Place in a casserole dish. Combine soup and water, pour over meatballs.

Bake, covered, at 350°F for about an hour.

*To save some calories - instead of rolling meatballs in flour and browning in oil, broil shaped meatballs in oven to brown. Continue recipe as normal.
