WASHINGTON STATE APPLE CAKE 
3 lg. eggs
1 c. vegetable oil
1 tsp. baking soda
1 tsp. vanilla
2 c. sugar
2 c. all-purpose flour
2 tsp. ground cinnamon
1 c. walnuts

Preheat oven to 350 degrees. Grease and flour 9x13 pan. In large bowl beat eggs with electric mixer until frothy. Add sugar and oil. Beat until sugar is dissolved.

Combine rest of ingredients. Spread apples in bottom of prepared pan. Pour batter over apples. Bake 1 hour; set aside to cool.

CREAM CHEESE FROSTING;
3/4 c. softened cream cheese
2 c. powdered sugar
4 tbsp. butter
1 tsp. lemon juice

When cake is cool, beat softened cream cheese with butter until fluffy. Gradually beat in sugar and lemon juice until creamy. Unmold cake and spread icing over cake top only.
