BAKED SQUASH 
3 lb. yellow summer squash
1/2 c. chopped onion
1/2 c. bread crumbs
2 eggs, beaten
1/2 c. butter
1 tbsp. sugar
1 tsp. salt
1/2 tsp. pepper

Cut up squash. Boil until tender (or cook in microwave). Drain and mash. Add all ingredients except half of butter. Melt that and pour over mixture and sprinkle with cracker crumbs.

Bake a 375°F for 1 hour or until brown.

Since microwave ovens vary in power, you may need to adjust your cooking time.
