GREEK SPINACH PIE 
2 (10 oz.) pkgs. frozen chopped spinach
2 lbs. sm. curd cottage cheese
6-8 tbsp. flour
1/2 lb. brick cheese
1/2 lb. cheddar or longhorn cheese
6 eggs
1 stick butter

Boil spinach until thawed; drain well. Beat eggs and add spinach, then butter, flour, salt and pepper to taste. Cube cheeses, add along with cottage cheese. Stir gently. Pour into greased 9"x13" pan. Bake at 350 degrees for 1 1/2 hours. (Until knife inserted in center comes out clean.) To make 1/2 recipe, bake 45 minutes. Serves 10 to 12.
