MORNING GLORY MUFFINS | |
Stir together: 2 1/4 c. flour 1 tbsp. cinnamon 2 tsp. baking soda 1/2 tsp. salt Stir in: 1/2 c. raisins 2 c. grated carrots 1 c. grated apples 8 oz. drained, crushed pineapple 1/2 c. pecans or walnuts Make batter and stir into the above: 1 c. vegetable oil 1 tsp. vanilla Bake for approximately 35 minutes at 350°F. Cool in pan for 10 minutes and then remove from pan. Better after a 24 hour "ripening". |
