PORCUPINE MEATBALLS
1 1/2 lbs. ground beef
1/2 c. Minute Rice (uncooked)
1 lg. onion, chopped
1/2 c. milk
1 can tomato soup
Salt and pepper to taste

Mix ground beef, rice, onion, and milk thoroughly. Shape into balls (about the size of a half dollar). Place into a small casserole and pour over them this mixture: tomato soup which has been diluted with 1 can of warm water. Cover and bake at 350 degrees for 1 1/2 hours. The soup makes a great gravy over mashed potatoes.
