This is a traditional cookie of New Mexico also the states official cookie. Traditionally this cookie is made with pure lard, but shortening or butter can be used. 6 c. flour 3 tsp. baking powder 1 1/2 c. sugar 2 eggs 1/4 c. sugar 1/4 tsp. salt 1 lb. (2 c.) lard 2 tsp. anise seeds 1/4 c. brandy or juice 1 tbsp. cinnamon Sift together flour, baking powder and salt. Cream lard and sugar until fluffy; add anise. Beat in eggs one at a time. Mix flour and brandy until well blended. Turn dough out on floured board and roll to 1/4 inch thickness. Cut into shapes (the fleur-de-lis is traditional). Dust with mixture of sugar and cinnamon. Bake 10 minutes at 350 degree or until browned. This should make approximately 10 dozen small cookies. |
