“IMPOSSIBLE BREAKFAST CASSEROLE” IS IN:

IMPOSSIBLE BREAKFAST CASSEROLE 
1 lb. pork sausage
1 tbsp. olive oil
1 small onion, chopped
2 cloves minced garlic (optional)
2 1/2 cups frozen hash browns
1 cup shredded Cheddar cheese
1/4 cup green onion, chopped
1 3/4 cup milk
1 cup Bisquick
4 eggs
1/4 tsp. salt
1/8 tsp. pepper
1/2 cup shredded Cheddar cheese

Preheat oven to 400°F.

Brown sausage, onion and garlic. Drain and mix with all other ingredients except 1/2 cup cheese. Mix and place in large casserole. Top with remaining cheese.

Bake for 40 minutes.

This is one of those clean out the fridge recipes because if you have the basics - eggs, flour/Bisquik, cheese, milk - you can add absolutely anything you like and make it your very own (and I've tried several having friends over for "potluck" brunch) - from a pizza casserole, to a Southwest casserole, to a Southern casserole, to a New England casserole - the combinations are ENDLESS and it's perfect for that morning after celebration brunch - say on New Year's Day with Bloody Mary's or Mimosas.

We just finished a Bisquick breakfast casserole. I didn't have all the ingredients called for so had to improvise. I didn't have hash browns but had left over pot roast potatoes. I also didn't have cheddar cheese so ended up using shredded Swiss instead. I also made some white country gravy to put over the top. My husband loved it and looking forward to tomorrow as the two of us could only eat half the pan of casserole. Husband says write it down and do it again.

If you do not have hash browns - use regular potato - well washed (or can peel first) - shred on box grater - using same holes as you would if shredding for coleslaw. This is also easy way to make potato cakes. Quick, easy - since most people do have a potato or two around.

This looks like another good one... You could add other stuff like sauteed red pepper, onions or spinach if you wanted, but have to cook a little first in a little oil...

This is Perfect for a Weekend Getaway or a Family Gathering! Yummy & Tasty! I prepared it exactly like the recipe the first time. And now on my second one in three days... I'm adding some red bell pepper and covering with a sheet pan when my cheese on top is a pretty golden brown. I also added the whole cup of cheese inside and added a big handful on top. Hits the spot for us. Thanks So Much for this wonderful recipe!!

I had searched for hours. I wanted a casserole with all these ingredients for the perfect combination! This is it. I used spicy cheese and added green chiles in place of green onions, Italian sausage also half and half for the milk. Topped with salsa and sour cream for a little Mexican twist. This is the best basic casserole I have found, also great the way it is, easy to add to and it always turns out.

I've made more than my share of breakfast casseroles and this one is by far the best. I prepared the recipe as stated, except that I used a spicy pork sausage and served with salsa. Everyone loved it! My search is over....this will be the recipe that I use from now on.
