UNCOOKED TOMATO PASTA SAUCE 
6 plum tomatoes (about 1 lb.)
3-4 cloves garlic, minced
1 c. loosely packed basil (shred)
1/2 c. chopped parsley
1/2 c. olive oil
1/2 tsp. dried red pepper flakes (optional)
1/2 tsp. salt and pepper
10 oz. pasta (linguine or spaghetti)
Parmesan cheese to taste

Dice tomatoes to 1-inch pieces. In bowl put tomatoes. Add all ingredients; toss well. Let it marinade at least 2 hours at room temperature. If it is chilled, remove 2 hours before. Serve with pasta.
