1 can (8 oz.) tomato sauce 1/4 c. firmly packed brown sugar 1 tsp. prepared mustard 2 lbs. lean ground beef 1/4 c. cracker crumbs 2 lg. eggs, lightly beaten 1 med. onion, minced 1 1/4 tsp. salt 1/4 tsp. pepper Combine tomato sauce, brown sugar, and mustard. Set aside. Combine remaining ingredients. Add 1/2 cup tomato sauce mixture, blend well. Fill (8 cup) microproof ring mold. Pour remaining tomato sauce mixture evenly over top. Place in microwave. Insert temperature probe into center of meatloaf. Cooks high about 12 minutes. |
