MUSHROOM STUFFED ENGLISH ROAST 
¼ cup butter
1 onion, chopped
½ cup chopped celery
1 cup fresh mushrooms, cleaned and chopped
2 cups soft bread crumbs
¼ tsp. salt
1/8 tsp. ground black pepper
3 lbs. English cut beef roast
6 strips bacon

Preheat oven to 350°.

Melt butter in a saucepan over medium heat. Add onion, celery, and mushrooms and sauté for 10 minutes or until tender; let cool.

Combine bread crumbs, salt, and pepper in a bowl. Stir in the vegetable mixture; toss gently.

Slice roast beef three-quarters of the way through to form a pocket. Spoon stuffing into the pocket and secure with toothpicks. Place in a roasting pan. Arrange strips of bacon diagonally on top.

Roast 2 hours, or until cooked to your preference. Serve hot. Makes 6 servings.
