OLIVE OIL CHICKEN 
1/4 c. plus 3 tbsp. olive oil
2 cloves garlic, minced
1/3 to 1/2 c. bread crumbs
2 tsp. garlic powder
2 tbsp. butter
1/4 c. dry white wine
Juice of 1 lemon
Salt and pepper to taste
6 split chicken breasts

Preheat oven to 400 degrees. Lightly coat roasting pan and chicken with 2 tablespoons oil. Place chicken in pan and sprinkle 1/2 of minced garlic on chicken. Add salt, pepper, and 1 teaspoon garlic powder. Sprinkle with 1/4 cup bread crumbs and lightly drizzle on chicken 1 tablespoon oil and 1/2 lemon juice. Dot with 1 tablespoon butter cut in small pieces.

Bake 15 minutes, then lower oven to 325 degrees and bake another 1 hour 15 minutes.

Turn chicken after first 30 minutes and dress the other side the same as the first side. Turn again in 30 minutes. Add wine the last 30 minutes.
