BREAKFAST BURRITO 
1 lb. sausage
1 lg. potato, baked, peeled & chopped
6 eggs, beaten
1 sm. onion, diced
6 flour tortillas

Brown sausage and onions, drain. Add diced potato and eggs and scramble all together. Place generous amount of cooked mixture in steamed tortilla. Excellent served with picante sauce. Serves 6 to 8.
