BRISKET OF BEEF | |
1 (3 lb.) first cut brisket of beef Salt and pepper 5 onions, sliced 1 tsp. minced garlic 2 tsp. potato starch Rub the brisket with salt and pepper. Into a heavy casserole just large enough to hold the brisket arrange the onions, top them with the beef, and sprinkle the garlic over the top. Cover the brisket with foil and the lid and bake it in a preheated 325 degree oven for 2 1/2 to 3 hours, or until tender. Let the meat stand in the pan for 20 minutes, then transfer it to a cutting board. Skim the fat from the pan juices, sprinkle the potato starch over the onions, and simmer the mixture, stirring, for 2 minutes, or until just thickened. Remove the casserole from the heat immediately and pour the sauce into a heated sauceboat. Slice the brisket thin, arrange it on a heated platter, and nap it with some of the sauce. |
