CARROT CASSEROLE 
1 lb. pkg. carrots
Salt to taste
1 c. water
butter
Velveeta cheese
Ritz crackers

Cook carrots in water with butter and salt. Cut in half lengthwise. Lay in buttered dish. Cut up cheese (the more the better) and sprinkle on carrots. Crumble the crackers and put on top, then dot with butter. Put in 350 degree oven for 5-7 minutes or until cheese melts.
