CINNAMON-RAISIN MUFFINS | |
1 1/2 c. whole wheat flour 1/3 c. packed brown sugar 3 tsp. baking powder 1/2 tsp. salt 1 tsp. cinnamon 1/2 c. wheat germ 3/4 c. unsulfured raisins 2/3 c. milk 1/3 c. soy or other cold-pressed oil 2 eggs, slightly beaten Mix first 7 ingredients in bowl. Add remaining ingredients and mix only until dry ingredients are moistened. Fill greased 2 1/2 inch muffin pan sections 2/3 full and bake in preheated 400 degree oven about 20 minutes. Makes 12. |
