WHITE POTATO PIE 
2 c. potatoes, mashed (4 med. potatoes)
1/4 lb. (1 stick) butter
1 c. sugar
2 c. milk
1/4 tsp. nutmeg
2 eggs
1 tsp. vanilla
1 (9-inch) unbaked pie shell

Preheat oven to 350 degrees. Cream butter. Add sugar to butter. Add eggs to creamed butter and sugar mixture, beat well. Stir in the mashed potatoes. Add milk, vanilla and nutmeg. Pour into unbaked 9-inch pie shell. Bake at 350 degrees for 45 minutes.

Tried this recipe for the first time today and found that 2 cups of milk is too much for 1 pie. I had to cut it back to 1 1/4 cups of milk to make it work. Still a great recipe and very delicious.
