WHITE POTATO PIE 
2 eggs
2 c. mashed white potatoes
1/2 c. butter, softened
3/4 c. sugar
1/2 c. brown sugar
1/4 c. evaporated milk
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1 tsp. vanilla flavoring
Pastry for pie crust

Prepare pastry. Buy ready made 9 inch pie crust. Heat oven to 425 degrees. Beat eggs; beat in remaining ingredients. Pour into crusts - 2 crusts. Bake 15 minutes. Reduce temperature to 350 degrees. Bake until done in center and crust is browned, about 45 minutes. You can pre-bake crusts.
