MAKE AHEAD ORANGE CARROTS 
Make the day before and refrigerate. Heat before serving.

1 lg. pkg. carrots
1 (6 oz.) frozen orange juice
2/3 c. sugar (scant)
1 tbsp. butter
1 tbsp. cornstarch

Peel and slice carrots - thin slice. (A food processor works well.) Cook carrots until tender - drain and set aside.

Melt butter in pan. Add cornstarch and mix together. Add defrosted orange juice (do not dilute) and sugar. Heat until the sugar dissolves. Pour over carrots and mix together. Garnish with chopped parsley - refrigerate. People who aren't fond of carrots like this.
