FRIED CRAPPIE, PERCH 
12 fish
Pepper
Salt
1/2 c. flour
1/2 c. cornmeal
Crisco or cooking oil

Salt and pepper fish. Roll in flour and meal (mixed). In large skillet (cast iron is best) melt Crisco. heat to piping hot. Fry fish until brown, approximately 10 minutes each side. Delicious with French fried potatoes and crisp green salad. Serves 4.
