ROAST BEEF A LA GREEK 
4 to 5 lbs. of beef
2 lg. onion, cut into rounds
3 tsp. butter
Lemon juice
Salt and pepper to taste
2 bay leaves
2 cloves garlic minced
1/2 c. red wine
2 ripe tomatoes, cut up
1 tsp. tomato paste
1/2 c. water
1/2 tsp. sugar

Season meat with lemon juice, salt and pepper. Add tomato paste diluted with 1/2 cup water. Combine water, garlic and wine. Brown meat evenly. Place onion rounds in the bottom of a baking pan. Place meat on top of onions. Arrange tomatoes around the meat. Pour wine mixture over meat and add bay leaves, salt and pepper. Cover and cook for 2 hours or until meat is tender. Serve sliced meat with sauce. Serves 8.
