CRABMEAT RAREBIT 
2 tbsp. butter
2 tbsp. flour
2 hard boiled eggs, chopped
1 can crabmeat (use a very good brand)
8 oz. very sharp Cheddar cheese, cut into sm. pieces
1/4 of a green pepper, chopped
1/2 pimento, cut into sm. pieces
1 c. milk
1/4 tsp. salt

Combine butter, flour, milk, and salt to make cream sauce.

Add the remaining ingredients, mix well and bake in a casserole dish for 30 minutes at 375 degrees until cheese is thoroughly melted.

Serve as a luncheon dish in patty shells, on toast, or with rolls and tossed green salad.
