SWEET POTATO - STUFFED APPLES 
4 apples
1/4 c. red cinnamon candies
3/4 c. sugar
1/2 c. water
1 c. mashed sweet potatoes
Pinch of salt
1/4 c. brown sugar, packed
1/4 c. pecans, chopped
4 lg. marshmallows

Core the apples and peel. Combine the candies, sugar and water in a saucepan large enough to hold apples. Cook over moderate heat for about 15 minutes or until candies are dissolved and syrup thickened. Place the apples in syrup and simmer until apples are partially cooked. Remove the apples from saucepan and place in a baking dish. Reserve syrup. Combine the sweet potatoes, salt, brown sugar and pecans. Stuff apples with potato mixture and pour reserved syrup over top. Bake at 350 degrees for 25 to 30 minutes or until apples are tender, basting frequently. Place a marshmallow on top of each apple and bake for 5 minutes longer or until marshmallows are brown.
