VEAL SCALLOPINI 
1 1/2 lbs. veal chunks
Salt and pepper to taste
1/2 med. onion, chopped
2 tbsp. oil
1 sm. can tomato puree
3 green peppers
2 tbsp. oil

Brown veal in 2 tbsp. oil. Add onion, salt and pepper and simmer until onion is clear. Add tomato puree and simmer slowly one hour.

Slice peppers into strips and fry in 2 tbsp. oil until soft. Add to veal and onion. At this point you can also add mushrooms if desired. Bring sauce to a boil then serve. Serves four.
