FRESH APPLE CAKE 
1 1/4 c. salad oil
1 tsp. vanilla
1 1/2 tsp. cinnamon
2 c. sugar
1 1/2 tsp. baking soda
1 tsp. salt
3 c. flour
1 c. pecan pieces
3 c. fresh, peeled, and chopped apples (or pears)

Blend oil, vanilla, and eggs. Add all dry ingredients and mix well. Mix in pecans and apples. Dough will be stiff. Pat into greased and floured tube pan. Bake 1 hour at 350 degrees.
