ZUCCHINI NUT BREAD 
2 c. sugar
1 c. oil
3 beaten eggs
3 c. flour
1 tsp. salt
1 tbsp. baking powder
1 tsp. cinnamon
2 c. grated zucchini
1/2 c. chopped nuts

Mix together sugar, oil, and eggs. Sift together dry ingredients and then stir into sugar, oil and egg mixture. Add zucchini and nuts. Pour into greased loaf pan. Bake about 45 minutes to 1 hour in moderate oven (350 degrees). Makes two standard loaves. This bread can be frozen with good results.
