ZUCCHINI NUT BREAD 
3 eggs
2 c. sugar
1 c. oil
1 tbsp. vanilla
2 c. flour
1 c. chopped nuts
1 tbsp. cinnamon
1 tsp. baking soda
1 tsp. salt
1/2 tsp. baking powder
2 c. grated raw zucchini
1 c. 3 Minute Brand Quick Oats

Beat eggs and sugar. Add oil and vanilla. Mix in flour, oats, cinnamon, soda, salt, and baking powder. Add zucchini and nuts. Mix well. Pour into 2 greased and floured 4 x 8 inch loaf pans. Bake 1 hour at 350 degrees.

DIET: A plan for putting off tomorrow what you put on today.

Mash overripe bananas or push them through a sieve, add a little lemon juice to keep them from turning brown, and freeze. Thaw for use in cakes or breads.

You can freeze part or all of a batch of bread dough. Just mix the dough, wrap, and freeze it. Or let it rise once, punch it down, wrap, and freeze. When it thaws, put it in the bread pans for its second rise.
