MICROWAVE LASAGNA | |
1 lb. ground beef 6 lasagna noodles (uncooked) 2 c. Ricotta cheese 2 (15 1/2 oz.) thick commercial spaghetti sauce 1 c. grated Parmesan cheese 2 pkg. (8 oz. each) Mozzarella cheese (sliced or shredded) Reserve 2 slices of cheese or 2/3 c. for top Can use your own homemade spaghetti sauce (must be thick). Microwave and drain ground beef. Mix 2 jars of commercial spaghetti sauce with ground beef. Spread 1/2 cup of meat sauce over bottom of 12 x 8 x 2 inch microwave-safe casserole. Place half of the uncooked noodles over sauce and top with half the Ricotta cheese; then half the Mozzarella cheese. Cover with half the meat sauce. Repeat layers and cover with half of meat sauce. Repeat layers and cover with remaining sauce. Sprinkle with the Parmesan cheese. Cover with waxed paper, microwave at medium (5) for 35 minutes. Rotate dish halfway through cooking. Place remaining Mozzarella cheese on top. Microwave at medium for 3 minutes or until cheese is melted. Let lasagna stand 5 minutes before slicing. Serve with salad and garlic bread. |
