PARTY CHEESE SPREAD FOR CRACKERS 
8 oz. sharp cheddar cheese
1 tbsp. grated onion
1 tbsp. milk
1/8 tsp. pepper
Dash of cayenne
2 tbsp. mayonnaise
3 oz. pecans, finely chopped
Strawberry or raspberry preserves

Shred cheese into bowl. Stir in onion, peppers, mayonnaise with wooden spoon until well mixed. Stir in pecans until blended. Pat mixture into a round or oblong shape on a serving plate, forming slight rim around the edge. Refrigerate several hours. Just before serving, fill center with preserves. Serve with assorted crackers.
