3/4 c. cold mashed potatoes
4 c. powdered sugar
4 c. coconut
1 1/2 tsp. vanilla
1/8 tsp. salt

Blend together. Shape into peaks on a lightly greased surface. Let set, uncovered, for 20 minutes to dry.

Meanwhile, in top of a double boiler, melt 4 oz. coating chocolate. Dip base of peak into chocolate. Allow to stand on waxed paper until chocolate is firm. Makes 2 1/2 pounds.
