COCONUT ALMOND BALLS 
3/4 c. mashed potatoes
1 lb. powdered sugar
4 c. flaked coconut
1 tsp. almond extract
5 tbsp. water
2 tbsp. corn syrup
2 tbsp. butter, softened
1 (15.4 oz.) pkg. chocolate fudge frosting mix
Toasted almonds (opt.)

Combine potatoes, powdered sugar, coconut and almond extract in large mixing bowl. Mix well. Drop by teaspoons onto waxed paper. Chill for 1/2 hour then roll into balls. Chill for 45 to 60 minutes or until very firm. Place water, corn syrup and butter in 1 1/2 quart casserole. Cook on full power for 1 to 2 minutes, or until heated through. Stir in frosting mix. Cook on full power 2 to 3 minutes, or until smooth and creamy (if chocolate hardens, reheat on medium until softened. Add more water if needed.) Dip balls in chocolate and place on waxed paper. Top each ball with almonds, if desired.
