BREAKFAST CASSEROLE 
4 eggs
1 c. milk
4 slices bread, cubed
4 oz. cubed or grated cheese (best with cheddar)
6-8 slices bacon, fried and crumbled
Salt and pepper to taste

Beat eggs slightly and mix with the milk. Place cubed bread in a 9x9 square pan and pour egg/milk mix over. Sprinkle the cheese, and then the bacon over the top bread/liquid mixture. Salt and pepper to taste.

Bake in a preheated 325-350 degree oven for 45 minutes, or when the egg/milk mixture is done (congealed) to your satisfaction. Allow to cool some before serving. Can be eaten hot or cold. Can be covered and frozen, to be thawed for later.

Suggestion: For the bacon, substitute 1/2 pound of sausage that is browned, drained and crumbled. For the milk, substitute buttermilk for the cheese flavor.
