OATMEAL RAISIN MUFFINS 
1 c. oatmeal (not quick cooking)
1 c. boiling water

Combine oatmeal and water and let stand 20 minutes.

2 eggs, well beaten
1 tsp. salt
1 c. all-purpose flour
1/2 c. butter
1 c. sugar
1 tsp. baking soda
1 tsp. vanilla
1 c. raisins

Cream sugar and butter together. Add eggs and beat. Add raisins to the dry ingredients and mix. Add vanilla to butter and sugar mixture. Stir in oatmeal mixture very gently. Put into muffin cups. Bake at 375 degrees for 20 to 25 minutes. These are very moist muffins, let cool before eating or removing from paper wrappers. Yield: 8 to 10 medium muffins.
